You all were there as I documented the many months on Weight Watchers and hitting the pavement running here on Buckhead Betty. It took time, but I lost 15, and have since gained back 5 as I have "maintained" -- aka ate and drank however I pleased haha.

January is here again, and for many people, this is a month of weight-loss resolutions. After my success last year, I am committing myself again for this winter and early spring to lose a little bit more. I have officially joined Weight Watchers (instead of doing it unofficially like before) and am really excited about their brand-new plan. I am also excited to start back up with spin class and running.
To start off right, this weekend has been all about restocking the pantry, fridge and freezer with healthy options. While I prepped for the week, I thought about all of my go-to healthy recipes. I thought it might be fun to recap them here for you, too, just in case you are looking for a diet overhaul of any kind.
- Taco Soup: You can vary the types of beans and meat in this simple all-in-one meal that's perfect to bring for lunch.
- Roasted Vegetable Rosemary Chicken Soup: You will forever look differently at those canned versions after tasting this slow-roasted favorite of mine.
- Refried Bean Soup: Do you see a pattern here? Soups are easy, healthy and can be made with just a few inexpensive items.
- Meatball Subs: As Rachael Ray would say, yum-o. This is a great way to take advantage of those sales you see on Italian items like bread crumbs and tomato sauce, if you don't have them already.
- Italian Vegetable, Raisin and Pine Nut Lasagna: I forgot about this one until just now. You better believe I will be making this next week though, as it's a great winter dish.
- Seared Scallops, Spinach and Parmesan Risotto: Just make it. Thank me later.
